We currently offer log-cultivated shiitake mushrooms from May to November. These mushrooms are available to chefs and local grocery stores in Litchfield County.
We only use oak and maple logs that have been sustainably harvested from the farm's woodlands for our shiitake inoculation. The resulting mushrooms are nutritious, tender, and full of flavor. We find them particularly decadent in spaghetti carbonara.
We have also begun to trial oyster and lion's mane mushrooms, which should be available in one to two years.
